Foundations of Cooking in Clay

Please join us at Long Table Farm in Eugene, OR on August 14, 2022 from 2:00-6:00 PM for a special class on cooking in clay. Clay pot cooking has been a staple of culinary traditions worldwide and remains an irreplaceable element of dishes in many cuisines. In this class, I will teach three foundational cooking techniques that can be applied to a wide variety of recipes and used with many kinds of cookware. We will use a bean pot to cook beans, and clay casseroles to make a pilaf and also braise a roast in Long Table Farm’s wood-fired oven. I will also give a micaceous clay pottery demo, sharing with students the techniques for making this beautiful and durable type of clay cookware!
